Chef Dario Cavaliere writes a weekly food column for the Waterford News & Star


THESE candy popcorn bites are the perfect way to use up any extra popcorn that is around the house, and will work equally well with regular salted popcorn or with the sticky toffee one. It ends up being a great mix of salty and sweet flavours and is great fun when set as you get to smash it up and break it into bite sized pieces. Always a fun afternoon with the kids.


50g toffee popcorn

50g peanut butter

200g milk chocolate

200g white chocolate

1 tsp. glycerine


Line a 20 x 30 cm baking tray with non-stick baking paper.

Melt the milk chocolate in a pan over simmering water. Add ½ tsp. glycerine and the peanut butter and stir until smooth. Pour half of the chocolate into the prepared baking tray.

Scatter all of the toffee popcorn over the melted chocolate and set aside.

Melt the white chocolate with the other half teaspoon of glycerine. Stir until smooth.

Pour all of the white chocolate over the popcorn, but in a random pattern. Place the milk chocolate back on the simmering water and melt again. Scatter this over the white chocolate and then, using a knife, swirl the chocolates tighter so that you have a random swirled pattern.

Place the tray in a cool place to set. When ready smash the bar into bite size pieces and serve.
