I love this dish as it is just so easy to prepare and it really does taste fantastic. Harissa is a spicy tomato paste and you can find a jar in the supermarket if you prefer, but it really is easy and quick to make yourself.

It should be creamy and smooth and have a kick with the chilli. Also, you can really use any fish for this recipe as harissa is so versatile that it will suit most fish and meat.

Harissa Baked Fish (Serves four)

Harissa Paste

3 tbsp. Tomato paste

2 tbsp. olive oil

2 garlic cloves

1 tsp. ground paprika

½ tsp. ground coriander

½ tsp. ground cumin

½ tsp. ground caraway seed

½ tsp. dried chilli flakes

½ small fresh red chilli

1 tbsp. lemon juice

salt and pepper

4 pieces of fresh fish like salmon, hake or cod

1 lemon

2 tbsp. olive oil

Dry the fresh fish with paper towel and set aside. Brush the olive oil on a baking sheet lined with non stick baking paper. Place the four fish pieces, skin side down if not removed.

Make the harissa paste by adding all of the ingredients except the oil to a blender. Turn on and then slowly drizzle in the olive oil until you have a smooth paste. Add a little more oil if needed, scrape down the sides of the blender then puree again until there are no lumps and everything is incorporated.

Brush the top and sides of the fish generously with the harissa paste. Place in a preheated oven for seven to 10 minutes or until the fish is cooked and firm to the touch.

Remove and serve with lemon wedges, a salad or some steamed rice for a delicious and healthy summer dinner.
